Hot Sake
Sake, a Japanese alcoholic beverage made from fermented rice and more importantly my poison of choice
I love this stuff!

Sake is served either hot or cold. Cheaper sake is best served hot whereas better produced sake with more defined flavours can be served cold.

Ingredients
Sake

Mise-en-Place:
Boil a saucepan of water. Once the water has boiled remove the pan from the heat

Method:
Place the sake bottle in the hot water. Leave to soak until the sake is hot (about 3-6 minutes)
or
Place the sake in the microwave. Cook in small bursts until hot

Do not scald or boil the sake. If this occurs the alcohol will cook out and the taste will be ruined!

Presentation:
Sake is traditionally served in small cups from either a ceramic kettle or small flask

Chef Insight:
Sake has been produced in Japan for over a thousand years. After all these many years of drunken experience and heavy hangovers the Japanese came up with this fine proverb:
'With the first glass a man drinks sake, with the second glass the sake drinks the sake, with the third glass the sake drinks the man'
