Italian Roast Potatoes
Beautiful flavours, simple to produce and if you're short on time and can't go with traditional roast potatoes these are always an excellent alternative that marry particularly well with all roast and pan-fried dishes.

Serves 4

Recipe Ingredients
675g / 1.5lb potatoes
2 cloves garlic
1/2 bunch mixed fresh herbs (oregano, sage, basil, etc)
Sea salt and cracked black pepper
2-3 Tblsp Olive or vegetable oil

Mise-en-Place:
Preheat the oven to gas mark 5/ 180°C /350°F
Wash the potatoes (but do not peel!)
Cut the potatoes into segments
Roughly chop the garlic and herbs

Cooking Method:
Place the potatoes in a roasting tray
Add the remaining ingredients and toss together
Roast for 25-30 minutes
The potatoes are done when they have coloured and when cut in half they are soft all the way through
Serve

Cowboy Trick:
Really short on time? Panicking?
Deep fry the potatoes for 3-4 minutes in clean oil
Transfer to a roasting tray, add the remaining ingredients
Roast or grill for 5 minutes
